If you have ever had any experience making marinades or other sauces and dressings, then it will be no problem for you to also make your own buffalo sauce. There are also some pretty simple ways you can create your own buffalo sauce, even if you are a newbie to cooking. There are even some ways where you can use premade hot sauces to make into a buffalo sauce, and those are going to be the easiest ways for a beginner to get started in the right direction to making a delicious homemade buffalo sauce.
We will start with the easy way, using a premade hot sauce such as Tabasco or Frank’s RedHot. You will want about 2/3 cup to start off with for a good base, but you can add more or less to your taste. When making your own buffalo sauce, the key is that you want it to be unique, and you want it to taste good to you. So keep that in mind with all the ingredients that you can always add a little bit more or less to taste.
The other ingredients that you will need are butter, white vinegar, Worcestershire sauce, cayenne pepper, garlic powder, salt and any other spices that you want to add.
The first thing you will want to do is combine about 2/3 cup of your chosen hot sauce (or homemade blend) with about one tablespoon of Worcestershire sauce. Add in a half a cup of butter. If you’re using more hot sauce you might want to also use a bit more butter, too, for consistency purposes. Mix these all in a saucepan and slowly heat. Add in your spices, ¼ teaspoon each to start, and then more of different ones to taste. You’ll also want to add about 1 and ½ teaspoons of the white vinegar. Bring these all to a simmer over medium heat, you don’t want it too hot or it will boil off. As soon as it begins to boil, remove from heat and let it thicken, stirring occasionally with a whisk so it doesn’t get chunky.
If you’re a daredevil, you might want to make your own buffalo sauce because you want something hotter than what you can find in stores. There are two ways to make a buffalo sauce hotter. The first way is going to require a little more searching. The best way to make a hot sauce hotter is to add chilies that are hotter than what is used in the buffalo sauce originally. Here are some peppers, and their levels of hotness on the Scoville rating system.
Larger ratings on the Scoville scale are hotter than smaller numbers.
Jalapeños 2,500-10,000 SHU
Cayenne Peppers 30,000-50,000 SHU
Bird’s Eye Chili 50,000-100,000 SHU
Habanero Chili Pepper 100,000 – 350,000 SHU
Red Savina Pepper 250,000-450,000 SHU
Habaneros are probably going to be the best bet for finding in a US grocery store. Jalapeños or cayenne peppers are also easier to find, but won’t add as much spice.
If you want your buffalo sauce to be less spicy, you can add brown sugar to make it sweeter. You might also consider adding pureed pineapple or a bit of honey to sweeten it up and calm down the spice.
